FOR THE GLAZE:
Preheat the oven to 400°F.
In a small bowl, combine the brown sugar, salt, chili powder, garlic powder and cayenne pepper.
Line a baking sheet with parchment paper. Lay out your sweet potatoes in a single layer and drizzle the oil over them, spreading gently to make sure they are fully coated.
Rub the coconut sugar mixture over the sweet potatoes, coating them thoroughly, and cook for 25-30 minutes, until tender. Let cool 5 minutes.
While the sweet potatoes are cooling, combine the coconut sugar and honey in a small bowl. Microwave for about 30 seconds – 1 minute until it is thin and smooth when stirred.
Transfer sweet potatoes to a serving dish and toss with the brown sugar glaze.
Makes 4-6 servings
