Sweet & Spicy Sweet Potatoes

Try this tasty sweet potato recipe for your holiay festivities. Enjoy!

Ingredients:

  • 6 large sweet potatoes or yams, peeled and sliced into cubes

  • 2 Tbsp olive oil

FOR THE RUB:

  • 1/4 C coconut sugar, lightly packed

  • 1 Tbsp salt

  • 1 Tbsp chili powder

  • 1 Tbsp garlic powder

  • 11 tsp cayenne pepper

 

FOR THE GLAZE:

  • 1/4 C coconut sugar, lightly packed

  • 1/2 C raw honey 

 

Directions: 

 

Preheat the oven to 400°F.

 

In a small bowl, combine the brown sugar, salt, chili powder, garlic powder and cayenne pepper.

 

Line a baking sheet with parchment paper. Lay out your sweet potatoes in a single layer and drizzle the oil over them, spreading gently to make sure they are fully coated.

 

Rub the coconut sugar mixture over the sweet potatoes, coating them thoroughly, and cook for 25-30 minutes, until tender. Let cool 5 minutes.

 

While the sweet potatoes are cooling, combine the coconut sugar and honey in a small bowl. Microwave for about 30 seconds – 1 minute until it is thin and smooth when stirred.

 

Transfer sweet potatoes to a serving dish and toss with the brown sugar glaze.

 

Enjoy hot!
