Mung Bean & Coconut Curry Stew

Ingredients

  • 4 Tbsp Olive Oil

  • 2 cups Assorted Vegetables ( chopped )

  • 1 Tbsp Cumin

  • 3 Tbsp Garlic (minced)

  • 1  can Low Sodium Diced Tomatoes

  • 2 Tbsp Ginger (freshly grated)

  • 2 tsp ground Coriander

  • 1 tsp Turmeric

  • 2 tsp Himalayan Pink Salt

  • 1 tsp Cayenne Pepper

  • 4 cups Low Sodium Vegetable Broth

  • 1 cup Mung Beans (checked for stones and well rinsed)

  • 1 can light Coconut Milk

  • juice of 1 Lime

  • 1/4 cup chopped Basil
